Butter provides flavour, water and solid fat; oils remain liquid; shortening has a different melting profile. These fats do not behave identically in creaming, pastry or chilled desserts.

Eggs bind and aerate

Whole eggs add water, protein, fat and emulsifiers. Whites can create foam; yolks enrich and emulsify. Egg size varies internationally, so weight is useful in sensitive recipes.

Leaveners need balance

Baking soda needs sufficient acid, while baking powder contains its own acid system. Too much can create off flavours or collapse. Yeast and steam are separate leavening mechanisms with their own requirements.
