Prevent crystallization thoughtfully

Clean equipment, controlled stirring and ingredients such as glucose syrup or acid may reduce unwanted crystals in some formulas. Do not scrape crystallized residue from the side of the pan into finished syrup.

Respect humidity and timing

High humidity can soften candies and coatings. Prepare the pan, thermometer, utensils and storage container before heating begins because confectionery often moves quickly once the target stage is reached.

Choose a simpler project when needed

Chocolate bark, refrigerator fudge and no-cook sweets can provide a confectionery-style result without boiling syrup. Beginners should build confidence with lower-risk methods before attempting hard candy or caramel.
