Metal conducts efficiently

Light-coloured aluminium pans heat predictably for many cakes and cookies. Dark metal absorbs more heat and can brown edges faster. Insulated sheets slow bottom browning.

Glass and ceramic retain heat

Glass lets you see browning but continues holding heat after removal. Ceramic varies in thickness and performance. Do not move glass bakeware between extreme temperatures unless the manufacturer says it is safe.

Silicone behaves differently

Silicone is flexible and often needs support on a sheet pan. It may brown less than metal and can hold odours or grease if not cleaned thoroughly.

Care for the pan

Follow manufacturer instructions, especially for non-stick coatings. Avoid damaged surfaces and unsuitable utensils. Specialty decorative pans need careful greasing and realistic expectations about release.
